Thanks for watching Rus. We usually splurge some on this cook. These steaks were some of the best we've had. Between the marbling and 24 hr heavy salt dry brine in the fridge, it broke down the fat and collagen in the meat and made it turn out uber tender. The flavor was spot on. We just kept ooing and ahhing how good they were. Bunch left over too. I vacuum sealed them to keep them at peak. A great time in spite of the weather and darkness. One day I'll get more stuff I need e.g. lighting. lol Merry Christmas brother.

Hi to all of the IFs, U were busier than a one armed paperhanger with those steaks tryin to keep things on an even keel. U had that SNS Kamado loaded up for sure. Like I have said before PIF, when u have vids of the entire family at the holidays and other gatherings it is a good memory maker for all the family to look back and see how grandpa and grandma had the house full up and all the food for everyone to enjoy. Good stuff right there. Before you showed all the food I was callin out the greens and I thought u would have had some garden corn. Cheers to u and the family. J

Hello J. Yep, when PIF is gone, the little ones can see what use to be. I had another half rack of room. LOL Those were some of the best tasting and uber tender steaks. The deep marbling and the xtra heavy 24 hr dry salt brine on both sides in the fridge made the difference. Thanks for continuing to follow the PIF CHANNEL. That prime rib you cooked looked delicious too. Hope your CHRISTMAS was a good one. Oh, we had the corn at Thanksgiving.

@@progers5019 cooking a pork butt today for tomorrow's dinner at my sisters home. Taking a chance and started the cook at 08:30 this morning. I have to deliver Meals on Wheels this morning. So I will be away from the WSM for 2 hours. One advantage of keeping a log of your cooks is you know how your pit reacts to different weather conditions. I should be ok but you never know. BTW I played your video from last December to refresh myself on how you prepared your pork to survive a day before being served. Merry Christmas to you and your family.

@@95SLE Yes nothing like today's fresh. Covered and refrigerated. If traveling on ice. Warming, never use microwave. That will cook the meat more and change the flavor. Warm in oven at 230 until warm .Stir a couple times to bring cold in middle out. If all is not needed only warm half and leave rest in refrigerator. Good luck.
