What location is this based on?

This isn't based off of a specific location - it's mainly a combination of things I have seen throughout different locations (via through my old memories or looking up photos on google)

Can I do this in 1.12.2

Yes you can. The only block you need to change is smooth stone which fortunately, you could just use the slab variant since that's in 1.12.2. (For the 2nd tutorial, you may have to change some stuff. For example, I have crimson signs and slabs which I would change to acacia signs and slabs.)
