2 1/2 lb Chuck, boneless roast

2 Bay leaves
16 oz Button mushrooms, thick sliced
4 Carrots (peeled and cut into 1" piec
2 stalks Celery
1 Onion, medium
4 Potatoes (cut into quarters), small red *optional
Canned Goods
1 1/4 cups Beef broth
2 tbsp Tomato paste
Baking & Spices
1/4 tsp Black pepper, ground fresh
1 French onion soup packet
1 pad of butter Worcestershire sauce

3 tbsp Olive oil
Beer, Wine & Liquor
2/3 cup Red wine
Season your meet with Montreal steak seasoning heat up your Dutch oven and brown near me in the olive oil and butter. Once your meat has a nice golden crust on all sides remove it from the heat and set it aside. Throw your onions and garlic into your Dutch oven along with the tomato paste. Let everything cook down and then the glaze with your beer or wine of your choice. Start adding your vegetables in and all of the seasoning. Top with your beef broth or water and beef bullion. Once it starts boiling add the French onion soup packet to your meat and nestle it back into the bottom of your Dutch oven. Cover and cook in the oven at 350° for 2 1/2 hours.
