My Foreign Friends trying Filipino Leche Flan

ive been to mexico, panama, colombia and peru. the flans in latin america and the filipino flan (leche flan) is not the same thing. filipino flans are more velvety in texture and has almost no bubbles. filipino flans are superior than the flans in latin america.

Nope. Mexican flan is better. And we have a type of flan called a jericalla which is even more velvety than Philipino flan

Honestly, I have tried a leche flan made by a distinguished Cuban lady (R.I.P.) from Miami many years ago and it was very comparable if not superior to a well-made Filipino leche flan. I believe she adds cream cheese to the recipe.

She might not be imagining the citrus. Leche flan can have calamansi or lemon juice in it to help remove the "lansa" of the egg as well as [to add citrus] flavor. That restaurant might do that.

Not all are using citrus. Thats something common only in the northern part of the PH. Majority of filipinos who make leche flan dont use citrus, but vanilla. Using citrus to mask the egg means that the quality of the eggs arent good.

@@rots.866 Yes, that's why I said "can have" instead of "has." Anyway, some restaurants that use vanilla might still use citrus. Also, some may add it not to mask the flavor of bad eggs but because they just like the flavor of citrus.

I can understand some people do not like leche flan or any flans in general because they are not a fan of eggs, there is an aftertaste in cooked eggs that makes some squirm, and leche flan fills your mouth and palette up very quickly that you feel you are so stuffed just by eating a couple of spoon fulls
