My favorite BBQ place when I was a kid, which sadly no longer exists, made the best enchiladas I've ever eaten. When I tell people that they think I'm crazy. But, people in the know, will agree. Barbecue and enchiladas are a match made in heaven.

Same here. My brisket is significantly smaller than yours, but there are only 2 of us so I still have a ton of leftovers that I didn't quite know what to do with. This has solved my dilemma as well.

@@summersands8105 make fried rice with some of it! Bonus points if you have some beef tallow from it to use when frying the rice. That's one of my fav ways to use leftover brisket. I shamelessly stole the idea from Blood Bros BBQ in Houston lol

My favorite way to finish enchiladas is to finely dice and rinse red or white onions in ice water, finely dice some jalapeno or cerano pepper, and mix that with lime juice and fresh cilantro. It makes an extremely sharp and bright topping that cuts through the rich, soft, earthy flavors of the enchiladas and gives a freshness and crunch that perfectly completes the texture.
