I think you gotta fry with a thermometer, and double fry at that. First fry at lower temp to cook then second fry at higher temp to crisp up. Also if the chicken was tempered to room temp first then that might help the cook.

if you find it burning quicker, what I've done in the past (including temp down) is continuously flipping the chicken. It's more work, but you can save yourself. Every 20-30 seconds flipping it.

@@graywolfish I was honestly flipping it a lot after noticing that initial 3 minute stint burnt the tops and i think that helped a lot to flip it frequently after that! I will keep this in mind for the 2.0 version
