Both things were common, single and doubles. Many theorboes nowadays are built with both options, the one he is playing in the video you can see that it is ready for two possible configurations, either the current 7x1+7x1 or a potential 6x2+8x1, meaning 6 double courses on the board and 8 single diapasons.
