Can't wait to try this recipe but I would love some guidance please. How long does it take for you to mix the starter into the dough? How do you know when the salt is all distributed evenly? Would it be fine to bake it in a loaf pan instead of open baked? Last, I'm curious to know if you put a rack or something inside the roaster to place the parchment paper with the bread on top so the bread doesn't get a thick or burnt crust. Thanks!

Hi Gisel, You can mix the starter into the dough for about 3-5 minutes. You will be able to feel the dough is smooth. You can mix the salt into the dough for about 2-3 minutes until you don’t feel the salt. Salt will get into the dough evenly while you do stretch and fold. Baking in a Dutch oven or roaster with a lid is easy way to bake. You can do open bake with steam (boiling water in a oven safe pan below the pan) - this you will have to cover with tin foil to avoid burning on top. Cinnamon can burn easily. You can use a loaf pan lined with the parchment paper bake in the roaster - I have done this, it is soft bottom crust. I added honey and olive oil to make it soft crust and crumbs. @@CastleCooking definitely, that’s what happens to me all the time , the thing is that I bake mine in a simply bread oven so have to figure out how to cover it , maybe with foil

Hi Bella, Yes you can add raisins to this bread. You can soak the raisins in water for 30 minutes and pat dry well with paper towel. You can add when you add salt or during the 1st stretch and fold.
