I think that when you have small thin filets of fish like whiting, sole or smelts, you are better off cooking them with butter. You just have to cook it slower like you said because butter will burn quicker. My Mom used to dust them with flour but I find that can make them gummy if your pan isn’t hot enough. I like them just the way you cooked them.👍

Might try some fish tacos in the future brodie XD.. gotta get me some more lemons too
