Raspberry Zinger Poke Cake -- Fantastic Dessert For Thanksgiving
Marie is making this beautiful cake as part of the Holiday Food Series. The recipe is for a regular cake but Marie substituted some of the ingredients with sugar free ingredients. It was very wonderful. We both enjoyed it very much.
Raspberry Zinger Poke Cake
INGREDIENTS
• 1 box (18.25oz.) white cake mix
• Ingredients listed on box to prepare cake
• 1 box (3 oz.) raspberry flavored Jello
• 2 cups hot water
• 1 jar (10 oz.) raspberry preserves
• 1 tub (8 oz.) Cool Whip, thawed
• 1 bag (7 oz.) shredded coconut
INSTRUCTIONS
1. Bake the cake according to package directions using a 9x13-in. baking pan.
2. After the cake has baked, remove from the oven and allow to cool for 30 minutes.
3. Poke cake every inch or so with the handle of wooden spoon or tines of meat fork halfway into the cake.
4. Mix the raspberry Jello with 2 cups of hot water until dissolved.
5. Pour the Jello evenly over the cake, trying to fill the holes as much as you can.
6. In a small bowl, microwave the raspberry preserves until easy to spread, about 30 seconds.
7. Pour the preserves over the top of the cake and spread evenly.
8. Top with Cool Whip.
9. Sprinkle the shredded coconut over the top.
10. Refrigerate for at least 4 hours before serving.
I made this sugar free by using sugar free cake mix, raspberry preserves, jello mix and whipped topping

What a wonderful recipe! As a teenager in the 1970s, I loved those Dolly Madison Raspberry Zinger snack cakes that were creme filled. This cake is great way to recreate the yummy goodness of the old snack cakes. Thank you so much!

I am a diabetic and I am addicted to sugar. It is the hardest challenge of my life. I love to bake and not cake mixes either. I learned to bake from helping my mother cook. When growing up, we always had a dessert after a meal. My mother always made scratch cakes. I have tried all sugar substitutes and they are just plain nasty. I do eat sugar some, just in moderation. If you look at the labels in the store, all most every single item has sugar in it. I will try this cake. Thank you Marie for posting this.

That sugar free cake is delicious. You can't tell by the taste that it is sugar free. My husband is diabetic and this dessert was a game changer when I found it at Walmart. I also buy the chocolate sugar free icing. Nobody can tell the difference. But I will definitely get the rest of the items to make this poke cake the next time I make it. Happy Thanksgiving Calvin & Marie! In one of your videos, I heard Marie talk about how she made her Iced Tea. I thought I heard her say she used one large Great Value Decaf Tea Bag to 1 gallon of water and 1 cup of sugar. So I went and bought the Great Value Family Size Decaf Teabags and the instructions were 1 family size teabag for 4 cups of water ( there are 16 cups in a gallon so that would be 4 family size teabags). Could you please let me know Marie's Iced Tea recipe again so that I make sure I get it right? Thanks and have a wonderful Thanksgiving!

We buy the one gallon bags so we only use 1 bag to a gallon. For the size you bought you would need to use 4 bags for a gallon. Sorry for the confusion. Calvin and Marie
