Path: 📌
- 6 eggs /M/
- 120g plain flour
- 120g powdered sugar
Coconut cream:📌
- 200g grated coconut
- 800g condensed sweetened milk
- 250g of mascarpone
We will still need:📌
- 30g of butter
- 100g grated coconut - for sprinkling, coating the roll
- tray and baking paper /30x40cm/
Procedure: 📌
- grease the baking paper with melted butter -/set aside/
- separate the egg yolks from the whites
- mix the yolks with sugar, beat the whites until stiff
- gently mix the beaten egg whites into the yolks
- add flour - mix gently and thoroughly
- pour the dough onto a tray covered with prepared baking paper
- bake at a temperature of 160°C for about 12 minutes
- roll the baked, still warm body into a roll and let it cool
Preparation of coconut cream: 📌
- mix sweetened condensed milk with grated coconut and mascarpone
📢❗I recommend preparing the cream only when the roulade is cooled, if the cream will stand longer,
it will thicken and it will be more difficult to paint ❗
- remove the paper from the cooled roll
- fill the roulade with cream, roll it up and cover it all with cream
- sprinkle the roll - cover it with grated coconut, wrap it in baking paper and put it in the cold for at least 1 hour / it will be easier to cut/.
