It’s the polyphenols that oxidize and turn the water pink. The meat will also turn pink and both may have more of a health benefit than clear coconut water or white coconut meat.

for those who wanna know - Pink coconut water is the result of oxidization of the sugars in the coconut. - so you need older coconut with higher levels of sugar in water - absolutely same story when you open apple and you leave it on sun, it turns brownish yellow (yellow + pink)

I've known about coconut water all my life and have never seen it turn pink under any conditions whether the water is from an older or younger nut. Leaving it out in hot sun for 5 to 6 hours with no refrigeration could make it go rancid
