So for the doubloon how can they tell if someone takes it out of the holder and try’s to pass it off as the original? If they can replicate it so well.

There is only a tiny amount of originals, and they sell for huge amounts. Any expert with an eye will be able to tell that is a newly minted coin and not 200+ years old. The only people who could afford an original like that would have it check and double checked before buying.

They come in Grams, not denominations of Troy Ounces.

This is the first year of the "gram weight" pandas, they are legal tender so they could be considered denominations.
