Hey James; try honey next time. I did a tray of honey (large cookie sheet on the Big Joe) a while back and kept the heat down to 150 or less. I stirred the honey every 15 min or so for several hours. Even with the heat that low, the honey thickened up quite a bit, so I thinned it back down with apple cider vinegar. It's excellent on pulled pork! Your method of cold smoke would be perfect if you don't want to thin it out later. Thanks for the video! Love your channel!

I use apple wood pellets for cold smoking cheese. I smoke for 2 hours and then vacuum seal for 2 weeks before opening.

I just made my first batch of smoked sausage. I used this video as my reference for the cold smoke at the end. You ought to try making sausage and doing some videos. Takes some time but the result was amazing. It’s yet another great way to use a Kamado Joe.

Great video. I really enjoy your channel. My source for smoked cheddar has gone away so I really want to try smoking it myself. You put it on the expander rack. Could I put it just on the main cooking grate since I won't be smoking water and bourbon at the same time as the cheese? Is that expander rack just to give you more surface area, or further separation from the smoking tube heat?

I have to give the burbon smoking a try. If I can not buy lagavulin to get a smokey flavor that would be really nice. I did smoked cheese this summer and was blown away with the results. Though I did it on too hot of a day so A lot of oil dripped onto other things. I waited a month before diving Into it but oh how delicious it is! I will also try smoking salt and peppercorns to give away as gifts with my baked goods this Christmas.

Here is what I may have done wrong. 1) started with a less than great bourbon. 2) 30 minutes may have been a bit long. 3) I know nothing of pellets and if 1 brand is better than another (I used cuisinart premium cherry rum) The smell was nice but the taste was horrible… extremely sharp/acrid and seemed oily?!? Will try again with a better bourbon and maybe less smoke. I’m not giving up on this

Hey great channel but if you want some solid cocktail advice: don't use the ice sphere. Pour your water into a small cooler and put that in the fridge, then take it out after the ice is frozen half way, pull that block out and you will have perfectly clear ice for cocktails that looks a million times better.

with the cold smoke, the deflectors work better at blocking heat than the sloroller which absorbs and radiates heat more easily

@@SmokingDadBBQ Directional freezing is the key. There are devices on Amazon that work, you can actually use those ice molds you have in conjunction with a cooler (takes a little rigging, but isn't bad)

the smoke moves at a pretty lazy pace and tends to wander around the dome before escaping as there is no true heat pump action which is where with a real fire you get an air draw and 20x acceleration (claimed) with the SloRoller.

thats the issue. not enough air for the smoke at low temps when cooking. at higher temps it works

Could you use this tube to add smoke to a regular cook on the KJ by laying it on its side on deflector plates or does it need to be on an open grate?

you can add it, but it needs enough air that you don't get so much smoke you extinguish your main fire.... and you can't have to much heat as the pellets ignite and turn into a combustable fuel source

Mine is A-Maze-n but it keeps disappearing, it too says horizontal but i've found it works better vertical. its just a metal case for pellets, whichever is in stock and cheaper is the one i would get
