I wouldn't exactly call all of that rust chunks. It is solidified chunks of the foam padding coating the inside of the ear cups and the speakers.

If you can elaborate on what these button latches are, I bet I can help you. I have a collection of gentex rotary wing helmets and have been working on them for several years and know them like the back of my hand.
