For ranged enemies, swing your sword at their projectiles once their green bullet is near you(red bullet can hardly be parried), you can combine parry and dash to make it easier to parry Ranged enemies' guns will have a red circle before it attacks, you can use them to help you time the parry(Note that different kinds of ranged enemies will shoot after different amount of time once the red circle shows) For Jason(and potentially vagabond), hit your him right after he glows a yellow flash(Must hit his swing hitbox NOT JASON HIMSELF), recommended to use parry dash when close To my own knowledge, his three hit combo attack is harder to parry, so wait for his three hit combos to end before parrying if u wanna play safe(wait for him to finish attacking, wait for 1-2 seconds, and parry dash. The timing needs practice) If he throws his sword at you, parry it like a ranged enemy's projectile(beware that the sword is faster than green bullet)
