Is there a reason why we excluded the shear stress from this question completely? We solved for Ry but didn't get to use it regarding the sum of forces. ( normal stress + bending stress, excluded shearing stress)

Yes, the moment is negative internally as it causes tension on the top and compression on the bottom. Since it's drawn that way in the FBD, the sign when solved is +, showing the assumed direction (negative moment) is correct. This is definitely a confusing topic. It's the difference between the FBD sign convention versus internal moment sign convention. Does that help?
