in my geology intro class in Germany they told us to put a small amount of the sediment in our mouth and chew on it - clay does not make grinding noises between the teeth, sand or silt does. They claimed that most sediments in vertical outcrops are safe to do that - I think I would take this method with a grain of sand though...

Seems like maybe you were getting it from a depositional environment where water delivered clay and soil in layers during weather events (the cracks imply water is present at some times)

This is not clay this is silt, you can still make some good pottery from it but its much easier to do with clay. There is brobably about only 1 mm of clay on top of that crackable texture or even less..
