Not gonna lie mate you’ve helped with a fair few bosses on my run through the base game and dlc! Never really used a shield throughout my play through but the dlc hits different, bosses seem more aggressive! Might be time to pick a shield out, cheers again from Newcastle!

Try doing a guide and gear of each weapon and the right times to attack If I use a guts greatsword it's slow soonyou got to make a guild for each weapon strengths and weaknesses
