The common arrowhead is also known as wapato or duck potatoes. This emergent aquatic plant has edible tubers but only if harvested from clean water sources. For further information see the link below:
- Arrowhead (identification, distinguishing features, flowers, leaves, height, habitat & edible parts): www.ediblewild...
As an FYI - at about the 1.40 minute mark I meant to say ethnobotanical! (I said ethnographic - oops!!! :) )

Do you have any planting information? And seed preparation? I have found a bunch of the plants “fruit” and harvested loads of the seeds(January). Would like to plant them in a pond for waterfowl

I am sorry - that knowledge I do not have. Perhaps check with some garden centers - some of these carry aquatic plants and may have some information.

I have read that the dislodged tubers will plant themselves after floating to a rest along the water side

What is the reason they can’t be eaten raw?? There are other seasoned foragers that say other wise. Though not nearly as tasty uncooked

I subscribe to several scientific journals to help in my research. There is indication that there are some levels of oxalic acid in the tubers so I prefer to err on the side of caution.

I just collected some from my local river and they are very hard to dig out. I made flour from them and it was surprisingly really sticky. It held together really really well and I'm sure it'd be great for flatbreads. One thing I was curious about is that my wapatos turned red and so did the flour as they tried.

I've heard that these have a dwarf variety, but no-ones been able/willing to show me any sources. Have you ever heard of this? I do have a specimen in my pond that is currently quite small, with leaves just about an inch in length, and stalks only about 6 inches tall, but I honestly have no clue whether this is because it's a seedling, or in incorrect conditions, or something of the like.

I'm not sure if there is a wild dwarf variety - but there is a common houseplant (not edible), the Syngonium Pixie Dwarf Arrowhead.

It looks a lot like arrowroot, which is something totally different. I think they are the same thing as canna lily
