The solid red flashlight isn’t so that you can be located faster. Red light doesn’t mess with your eyes’ night vision so it provides light without your eyes needing to adjust to the brightness of it.

The red flashlight was actually designed for when the user is inside a cinema or dark places with lots of people and need to illuminate something without disturbing the other people... as red doesn't attract that much attention. This is why when you turn on the Theater mode and used the flashlight, it emits red light instead of the usual white light. It has nothing to do with your eyes difficulty adjusting to white light. In fact, the apple watch detects if the watch is facing you and automatically lowers down the intensity and when faced away, it cranks back up the intensity.

You can record video from the watch without switching it on the phone. On the watch hold down on the white dot until it turns red then swipe it up to the middle and let go

No in camera you got control from photo to video. There’s that feature too. No need to look back on your iPhone. Just open the camera app on watch and swipe left or right just like you switch between modes in camera app on iPhone.
