Hi Olya! You should have added a teaspoon of cream of tartar or tartaric acid to your meringue. Thats why it didnt achieve the desired stiffness and airiness because there is no cream of tartar added to it, therefore your finish product became saggy or flattened after rolling. Cream of tartar is a must when making meringue based cakes or meringue for cake decorations. Best regards from the Ph🇵🇭

Easy BRAZO DE MERCEDES na siguradong creamy & fluffy? MY FULL RECIPE HERE 🥰🇵🇭🤙🏻 Yema Filling: 7 Egg Yolks 1sp Vanilla Extract 350g Condensed Milk 1/3c Evaporated Milk 1/2 tbs Cornstarch 1tbs Butter (for the glossy look) 1. Mix all ingredients in a pot 2. Place on low heat until thick 3. Once thick, Add butter for gloss 4. Sift for a smoother and spreadable texture 5. Refrigerate Meringue: 7 Egg Whites 1 Tsp Vinegar 1/3 C White Sugar 1. Whip egg whites & vinegar 2. Whip until frothy 3. Gradually add sugar 4. Whip until medium- stiff peaks 5. Spread evenly on a tray **Powdered Sugar for dusting**

Hello cousin Olya. I think I know why the cream filling is too runny. That's because you covered the cream in the bowl with the plastic wrap while it's still hot & you put in the fridge right away, thus creating the condensation & the water droplets fall back into the cream, hence the runny cream. Next time let it cool off at room temperature before cover it. This should solve the problem.
