This is how I meal prep. I prefer to do ingredients rather than fully make meals ahead. This allows flexibility and ensures you aren't eating the same thing the whole week. I much prefer just adding a few components to the prepped base ingredients to witch things up. Thsi also helps save money since each ingredient is multipurpose.

I like your meal prep and have saved this episode to refer to. I've fallen into the habit over the years of buying precooked items at the PCC deli and rarely cook from scratch anymore after caretaking elderly parents plus work. I do make fresh veggie salads though. Your recipes look delicious. Jenny

Great advice. I've found Kale easier to eat raw since I learned to rip the leaves (no stem) into pieces and then rub to bruise. Makes it nice and soft.

I also love salmon, but because of overfishing etc. you should eat it only once in a while and when doing so, choose organic salmon. I think, as you mentioned too, tofu is a great idea!

Great question! I prep ingredients that will keep in the fridge and make meals easier and quicker to make. All other ingredients stay in the fridge. Some recipes I create or I adjust other recipes which I find from the internet.

Very delicious looking dishes Connie! Hoping to try a couple of them. May I ask, what do you do with your extra items like condiments while you travel? Do you dispose of them and rebuy at the next destination? I find that when I travel (via airplane) it makes eating healthy a little challenging when I don’t have my usual ‘side ingredients’ like seasonings & condiment readily available.

Great question! If we are traveling via car we bring the condiments with us. Otherwise, I do our best to calculate how many condiments we have and try to consume as much of them as possible be we leave a location. Yes, we would then need to buy condiments at our new location.
