They "hold" closed or open mechanically after a pulse of voltage energizes the coil. An electrical relay whose coil is in series with its contacts. The contacts are closed by sending a pulse of current through the coil, and the contacts remain closed until the current flowing through them is interrupted. What is the function of a holding contact? The purpose of the hold in contact is to provide a current path through the relay coil when you release the start button. That is why it is wired in parallel with the start. Similarly, the stop is wired in series to break the relay circuit and hence stop the motor.
