And a tip for doing interiors in a huge build, you probably want to “zone” the building to help differentiate between all the areas. And it also helps to build a interior wall wrapping the whole of the exterior walls (just a 2 layer wall to hide the exterior wall), along with a 2 thick floor / ceiling by not having the same material for floor and ceiling.

one of my first large-scale projects was a woodland mansion makeover. my suggestion for the roof is to turn a significant chunk of the 2nd floor into an outdoor area (a large terrace, or even take it further down to the ground floor and make an interior courtyard) so that the roofable area ends up C-shaped or hollow square-shaped, which is much easier to handle than a big dumb square. the little windows embedded into the roof are called dormers, and they're great for making your roofs less boring. I'd suggest making them smaller than Joel's, since they'll make the building look larger that way.
