Cook With Me! Coconut Rice and Corned Beef Stew

Ingredients for Corned beef stew:
½ cup avocado oil
1 lb onions
1 lb sweet medley peppers
4 cloves garlic
1 scotch bonnet
2 lb tomatoes
1 cup chopped onions leaves or scallions
3 tablespoons tomato paste
12 oz can corned beef
½ grated nutmeg
1 teaspoon curry powder
1 Maggi shrimp tablet
Salt to taste
Ingredients for Coconut rice:
4 cups jasmine rice
13.6 oz coconut milk
2.5 cups water
3 sprigs of thyme
1 scotch bonnet
Some scallions or onion leaves
Salt to taste

Kwankyewaa watch your video yesterday, got up early this morning to buy sweet peppers as I wanted to cook YOUR recipe. I don't use as much tomato in my recipe but I wanted to cook this as it looked SOOOO DELICIOUS with plantain and coconut rice. You're right about the Corn Beef it melts away leaving just the flavour, my childhood memories might be deceiving me but I remember it being more CHUNKY when mum cooked it with rice and cabbage. I hated corn beef as a kid, it's only when I hit my early twenties that I totally fell in love with it. During Covid-19 it was hard to buy, my corner shop was selling 340g Tin for £15.50. I couldn't and wouldn't buy at that extortionate price. Anyway I cooked this beautiful recipe and sat back revelling in the admiration of everyone's kind compliments at a meal in reality is quite simple to make but exquisite in taste 😊

Hey Kwankyewaa, beautiful presentation as usual. I know it's delicious! I'm coming for dinner! Little tip - When opening a can of Corn Beef - Make a whole in the bottom of the can on the opposite side with a can opener/puncher, then open the can right side up - the entire Beef product will slide out of the can without you having to manipulate it. Try it sometime!😀😀

Delicious tomatoes and cornbeef stew cooked in a lovely tomatoe pot wow looks yummy with coconut rice but also very nice with yam or use the left over for gari forto OMG am going to make this over the weekend I always put my tin of cornbeef in the fridge overnight or a few hours before cooking it helps it stay firm in the sauce❤❤😋😋😋😋😋😋👍🏾
