As a Bakery Owner, I recommend adding some lemon juice and zest to your blueberry muffin recipe as it really enhances the flav. If dryness is the issue, try using buttermilk in the recipe for moistness and be sure to not overmix. Good luck Christine! Love watching your vids!

Do you ever make savory muffins? My grandma used to make these cheese, bacon and scallion muffins that were dreamy! Also her sausage onion and pepper ones 🤤 and yes please in the granola battle! I make my own and I just dump things into it and it’s always delicious, but I love new ideas!

Just add blueberries as the fruit in this muffin recipe you're using, instead of blackberries or strawberries. That should work. I sub things like that in and out all the time while I am cooking. I don't do streusel on my blueberry muffins.

About thirty years ago had a yummy pumpkin bread at a small café in northern California. They added fresh strawberries in the batter and served along side the bread a strawberry honey cream cheese spread.

I have 4 kiddos and I have to quadruple my pancakes to have some for the freezer! The best way to fry them is on the cast iron griddle and with coconut oil!! But I also have a ceramic griddle to have them both going, and I have two waffle irons😜I always do a huge breakfast cooking day, a favorite is breakfast burritos! As for the blueberry muffin...it can really be ANY berry our fave is elderberries.... 400° oven this makes 24 muffins 4 cups flour one teaspoon baking soda one teaspoon baking powder one teaspoon salt half cup oil 2 cups sugar 16 oz sour cream or yogurt two eggs one teaspoon vanilla half cup water One and half cup berries of choice I have a secret ingredients until smooth move slowly add dry mix with no clumps left Ben fold and berries of choice bake for 20 minutes

I listen to music ALL of the time. In the am while I shower & get ready for the day. Anytime I’m cooking or cleaning. And if I’m playing a word game on my phone. Both my husband & I sing along with the music from our favorite stations. So the answer is resounding YES.

I agree on using butter for pancakes. It makes a big difference. Also, I've been meaning to super thank you for the Baked Creamy Chicken Taquitos recipe that you shared about a month ago? Yea, about that long ago. I've made it about 3 or 4 times since then. It's a huge hit every time. All 3 of my dudes love it and the one time there were leftovers, it was a great next day lunch. My absolute favorite blueberry muffin recipes is from Allrrecipes, titled "To Die for Blueberry Muffins". It does call from streusel but I just leave it off. I wouldn't die for them but I'd sure do questionable things. :)

My go-to for reliably good baked goods is King Arthur Flour. I use their blueberry muffin recipe (I just made some today!) -- no streusel topping, just really good muffins! They freeze really well also.

My fiance and I are obsessed with lemon ricotta pancakes. We just use the part-skim ricotta left over from our manicotti, and they have this perfect dash of lemon flavor and a slight creamy texture from the ricotta...amazing. And they're a little more filling because the ricotta adds protein!

You can use some canned pumpkin dog treats :) cold ones are just pumpkin, non flavored yogurt, mix and freeze in little silicone ice cube trays. And there are some pumpkin dog bones that are easy to make as well.

Entertaining w/Beth here on KZbin has a strawberry lemon muffin mixed that I’ve made as is and w/blueberries. I like it because it uses oil and butter; they turned out so rich and buttery, yet light and fluffy. She has a ton of muffin recipes but that’s my favorite. She actually recommended the jumbo muffin tins too in a video and I bought them; they really do make a difference and turns out bakery style! Im on the hunt for a good coconut pancake recipe too but I’m definitely going to try yours. Thank you for sharing! 🤗

My blueberry muffin recipe is my favorite because it is one bowl and one liquid measure cup. Then I sometimes put my tur-bin-a-do?! Sugar on top. Bake them with butter spray not oil. Yummy.

Wondering about your blueberry muffin question: do you/family like them soft or crispy? I use my mother in law's recipe but it's baked @425 - 20/25 minutes for standard home muffins. The outside is crispy but inside is soft.

I listen to SO many genres of music. Just depends on my mood! Accapella, Irish pop, 90's country, 90's grunge, classic rock, big band, etc., etc. Also, pumpkin pies freeze very well.... I use pumpkin pie spice in my pumpkin bread; I bake brown bread in a can so it is circular. Never thought to use a mason jar!

I grow pumpkins and currently have 14 sitting on my dining room side dresser. It's winter here so my pumpkins are in storage. I had a hankering for a pumpkin bakery anything last week and thanks to Amy Maryom googled pumpkin chocolate chip muffins. Yummmmmm. I made them dairy and gluten free. Definitely a keeper recipe here. I've made pumpkin bread previously but also added a little ground chilli pepper for something extra.

My favorite granola recipes Crunchy Granola 1 ½ cups brown sugar ½ cup water 4 teaspoons vanilla extract ½ teaspoon salt 8 cups rolled oats ¾ cup pecans, coarsely chopped ¾ cup almonds, coarsely chopped ½ cup sunflower seeds, unsalted ½ cup shredded coconut dried fruits, if desired (tropical fruit is good, raisins, blueberries, cranberries, cherries are all great.) Heat oven to 275 degrees. Combine brown sugar and water in a 4 cup microwave proof cup. Microwave on high 5 minutes, or until the sugar is completely dissolved. Remove from microwave and stir in vanilla and salt. In a large mixing bowl, mix oats and nuts. Add the brown sugar mixture. Mix thoroughly. Spread onto 2 cookie sheets and bake for a total of 30 minutes or until golden brown. After 15 minutes, stir and put back in the oven for the rest of the time. When granola has cooked completely, add dried fruits. Peanut Butter Granola Mix & heat in 4-cup glass jug for 4 minutes on HIGH: 1-1/2 c white sugar 1-1/3 c margarine 1/2 t vanilla extract 2/3 c peanut butter 1/2 t salt 1 c water Mix in large bowl: 12 c rolled oats 1 t cinnamon Pour wet ingredients over dry and mix quickly and well. Put onto two small greased cookie sheets. Bake at 325 degrees for 25 minutes. Exchange cookie sheets in oven, cook 10 minutes. Turn oven off and let granola dry for several hours. Store in closed jar on kitchen counter and watch it disappear. This wonderful recipe is from Marie Ricks

have you tried baking pancakes? you can make a whole cookie sheet of pancake - bake it in the oven and then cut them out into squares.. that way you don't have to babysit them on the griddle

my pancake breakfast sandwich--american cheese, turkey sausage, apple butter and use a pancake as bread. homemade mcgriddle. yummy to me! also, prior to pandemic, you could get icing buckets and lids from local bakery for free. I ditch the lids and use gamma lids for easier access. ( so worth the money)

Yes to music! I put music on my phone and put my earbuds in...my kids laugh because I dance. Sometimes I listen to younger artist and sometimes I go with oldder stuff...acdc, led zeppelin,Bob seger,rush, even Elvis and Tina Turner. Proud mary is pretty darn good.

I dont put oil or sugar in my granola. I actually put the zest of citrus (either clementines or oranges) and the juice ( about 3/4 of a cup) and maple syrup ( im from Quebec )

For a good solid 2 years I’d listen to Garth Brooks radio on Pandora while working in the kitchen. Recently I’m more into Bret Michaels radio on Pandora, it’s a really fun throwback! My 14 year old daughter loves to bake and she has recently been listening to Beautiful Greek music, which connects us to our roots and feels like home 💕🇬🇷

Try putting your pancake mix in the oven to cook it takes apx. 10 min. They are so good and easier to cook ahead. Also maybe try coconut extract if there is such a thing.

Have you ever considered making your pancakes in a sheet pan and cutting them into squares? I always hated making pancakes (& omelets) until trying this method and am much more likely to make larger batches and freeze the leftovers.

you can freeze pancakes as well just freeze flat first
