Raju Gari Chicken Pulao Recipe:
For the Paste :
Green Chilli - 6-8 nos
Fried Onion - ½ cup
Other Ingredients:
Ghee - 2 tbsp
Oil - 2 tbsp
Cardamom - 4 nos
Clove - 4 nos
Cinnamon - 1-inch
Bayleaf - 2 nos
Mace - 1 no
Star Anise - 1 no
Cashew Nut - 10 nos
Shallots - 1 Cup
Ginger Garlic Paste - 2 tbsp
Chicken - 750 grams
Turmeric Powder - ½ tsp
Red Chilli Powder - 1 tsp
Salt - 2 ½ tsp
Garam Masala Powder - ½ tsp
Curd - ¾ Cup
Coriander Leaves - ¼ Cup
Mint Leaves - ¼ Cup
Hot Water - 4 Cups
Rice (Sona Masoori) - 2 Cups
Cooking Instructions:
1. Make the paste from the green chillies and fried onions. Set aside.
2. Wash the rice and soak for 15 minutes.
3. In a pressure cooker, heat ghee and oil together. Add all the whole spices.
4. Add the cashew nuts and the shallots. Saute until golden brown.
5. Add the ginger garlic paste and the previously prepared paste. Add the turmeric powder, red chilli powder, salt, and garam masala.
6. Add the chicken and mix well. Saute for 2 minutes.
7. Add the curd, coriander leaves, and mint leaves. Mix well. Cook for 5 minutes.
8. Add water to the pan and bring it to a boil. Add the soaked rice.
9. Pressure cook on high heat for 1 whistle, then low heat for 1 more whistle.
Cooking Tips:
1. For the fried onion, saute 1 cup of sliced onion in 2 tbsp oil until it turns golden brown.
2. You can use any medium-grain rice instead of Sona Masoori rice.

Wow, I tried this one, it's simply superb. I skipped cashews and roasted onion and chilli paste. just added green chillies fresh. still was so good. thanks for sharing the video

Hi I tried this , some suggestions if you want to take: 1. Video is focussed on presentation than the original recipe 2. Your cup size should have been told upfront as most of the people who rely on food channels are either beginners or bachelors 3. Whistle times, high and low flame specifications should have been given. Mine came out a little burnt , I just switched off the blame.. hopefully the taste should be good.

If I am preparing this in an Instant Pot, how can I proceed with time setting in the pot?

You can set it to pressure cook mode for 4 minutes. Once you hear the beep, the countdown starts. After 7 minutes, you can release the steam and open the lid.

The process is similar to biryani, but the main difference is that regular rice is used in this. So the texture at the end is mushy unlike a biryani.

What's the difference between a pulao and a biryani?

In Biryanis, the meat and rice are mostly layered, although in some versions of Biryani the meat and rice are cooked together. In Pulao, the rice is always cooked together with the meat. In this pulao, the main difference is the use of medium-grain rice. This will make the pulao sticky and moist, unlike Biryani.
