Had boiled ribs with butter beans and chow chow on cornbread as a kid, old school meals forgotten now sadly. Thanks for the memory, still looks good.

We used to have them too, Paul. boiled with split peas and served with boiled cabbage, loads of pepper and buttered, crispy bread.

Thnx Paul. Missed ya earlier had to mow the grass before rain showed up(now) no tornado today in forecast. Have a cutting board nearly same as yours. Not to mention orange handled Chicago cutlery. Got my knife when when working in beef packing 40yrs ago. The best Fred H.

Great vlog Paul I’ll be trying bacon bones for sure.. little tip but I’m sure you already know put a tea towel under your chopping board to prevent it from slipping 👍🏻👍🏻

Hi I. Love bacon bones, too I got same amount as you by looks of it ,it cost me £8.90 5 years ago would of been £4.50,it takes the P a bit considering iys mostly bone,I could have got a good gammon for that,but I love bacon bones, P.S. put a damp cloth under your chopping board, wene cutting,stops it sliding,and any accidents.

Interesting. I don't recall hearing about bacon bones. Do they taste like bacon or ham? I need to see if any of our grocery stores in the US carry them. Thanks for the info.

Paul, as an American I suspect the ribs are brined or corned before sold? Bacon makes me think of smoked meat.

I think the ribs are only salted before sold in this case, as the main part of the bacon being cut off them, then the ribs are kept to sell. Smoked would be fantastic though, never seem to see those for sale.

If you shred that bacon and put it into a pan of cooked dried mushy peas you will end up with the best pea and ham soup you've ever tasted. But DON'T add salt while boiling the ribs. The salt in the mushy peas is enough. Excellent vid, too. It certainly brought back memories of PROPER food !

We do a similar meal with ham hocks which are also full of flavour. I think it's cooking on the bones that helps. You can still get yellow split peas but I like mushy peas with mint sauce for added flavour. Regards Keith
