You almost got it but not quite. I suggest looking into Iraq's national dish -- masgouf. The most important factor is that they cook the carp next to the fire, not on top of the fire. So it takes 1-3 hours to cook and that drains most of the fat from the carp onto sand.

If you ever take really fresh meat and salt it, it will cause it to tense like that, as the salt alters the action potentials. You can also cause it with electrical stimulation, which I believe there's a patent for somewhere for turkeys, specifically, because it tenderizes the meat. I don't know if anyone actually uses such a device to tenderize very fresh meat before butchering and packaging, but I would be unsurprised.
