When my dad makes tacos de lengua he finishes it in a pan to get a nice sear on the outside while its still soft on the inside🔥

A couple of years it’s a long time jelly. I was always till six months for all the meat you can push it a little bit to 8 months. That’s an old freezer burned meat.

My wife's family is Mexican and even some of her siblings didn't want lengua. I was intrigued and wanted to learn how to make it. Very easy. I made lengua tacos for all my wife's sisters who had previously refused to eat it. They all loved it. After the lengua has been simmered or cooked in a crock pot, you can chop it up then sear it in a pan with a little lard or tallow. You get a little crispiness on the edges, but it still has the unctuous, silky texture. I've made legua with both beef and pork tongues. Both are great and very versatile. You can make it with various red or green sauces, or just plain. You can also take some of that chile-infused cooking liquid, reduce it down and then make your lengua tacos birria style.

Beef tongue is pretty expensive right now in the Northeast. I bought one last week, ~4lbs was $36.

A lot of people use brisket to imitate the taste and texture looks delicious!!! Some taco trucks even say its tounge or cabeza and it’s acutely brisket

Grew up eating lengua. I also tricked my friends into eating it and 30 years later they order their tacos de lengua all the time from the trucks!! 😂

I spent the summer of 72 with a French family in Cote door in a village south of Dijon. They served beef tongue twice with sausage and the tongue was hairy. It went right my plate!

Growing up my mom would by tongue since it was a cheap cut and cut off the buds and wrap it in banana leaves with adobo sauce. If you make enchiladas with the left over meat or for breakfast mix it in with eggs and potatoes… mmmmm

Really? That's the one thing I don't like about fishing sponsorships for pros. I don't use one company's baits. I use many. It doesn't mean I like one better than the other. It means each has their own strong suit. Yamamoto senkos, reaction innovation thirsty beavers, zoom horny toads, spro frogs, Berkeley power worms, Smith whick rattlin rogue... And so on.

Would Buffalo tongue taste awesome generally when I’m out with the traditional landowners the aboriginal people all they want is the tongue all the rest of me is given to everyone else one of the best cuts close to the heart then probably backstrap or tenderloin
