Mojo is the ultimate Cuban sauce. It's made of just 4 simple ingredients and it will liven up most cuban dishes. Mainly used as a topping for Tostones, Mariquitas, Yuca and pork. Directions in English and Spanish below!

Directions:
Step 1: Mince/crush garlic and salt by hand or with a food processor (salt to taste). If you crushed it by hand in a mortar, leave the mixture there. If you used a foo processor, place the mixture into a mixing bowl.
Step 2: Squeeze lime over the garlic and salt mixture. Just enough so that the lime juice covers the garlic.
Step 3: Add very hot oil to the mixture and stir. Usually, mojo is used over tostones or mariquitas so you would add the hot oil from frying those dishes into your bowl to complete the mojo. If you are not frying anything and want to make mojo to use on another dish, just heat up oil in a saucepan until it is very hot.
Step 4: Put the mojo on whatever food you want and ENJOY!
Instrucciones:
1er paso: Machuca el ajo y la sal juntos en un mortero o en un el procesador eléctrico. Si usas un mortero, deja los ingredientes ahi. Si usas un procesador, pasa el ajo y la sal a un plato hondo.
2do paso: Esprime limón sobre el ajo hasta que el jugo del limón cubre el ajo.
3ro paso: Agregarle aceite muy caliente al ajo y limón. Normalmente, el mojo se usa para agregarle sabor a tostones o mariquitas. Si estas cocinando uno de estos acompañantes, usa el aceite caliente después de freírlos. Si quieres usar mojo con cualquier otro plato, simplemente caliente un poco de aceite en una olla. Cuando esta muy caliente el aceite, agregarlo al mortero con el ajo y limón.
4to paso: Hecha el mojo donde quieras y buen provecho!

What a wonderful video! We had Cuban cuisine from an authentic source and I was introduced to a garlic mojo sauce that was served with lechon asado. OHMYGOD, how have I managed 63 years on this planet without this magical elixir? As an aside.... why does it take some of us (i.e. me) so many years to learn to truly appreciate our elders? We always think we know better... that *we're* up on all the latest everything, that they couldn't POSSIBLY be as sharp as we are, or possess valuable information. I was worried since many other recipes here include orange juice, thyme, oregano etc. I tried this first with my fried plantains and it's honestly one of the best condiments I'll keep in my recipe book forever. 😁 The others I assume would be best for a marinade, and oregano adds quite a nice kick to it, but nothing beats the simplicity of fresh garlic, salt, and lime pounded together. I've been risking the major garlic breath everyday lol

i did it without cooking the oil like some but i like how you add the hot oil not cook it. I did it fresh squeezed not hot oil and let it set for 3 hrs wow nice heat. I also save the lemon or lime to use to clean the copper pot bottom with salt it will make is shine up and nice. I like your recipe because no need to wait to marinate it for hrs and i dont like to cook the oil like the frican rican guy does as it is a PIA

Cubans make 2 types of mojo and usually we just say mojo for both lol. Mojo criollo is the one you buy at the store and that is used to season things like meat. It has sour orange, garlic, salt, pepper etc... The mojo from this video is used for dressing foods like tostones, mariquitas, yuca and the like!

I did not know the microwave trick. I re all now seeing long ago by others a few times. I must not forget again. Hoe much lime if you don't want to buy a lime I'm ordering delivery ? I have little line juice plastic bottle. Is just me so i want to make leds tostones. I guess 2 plantains enough for a few left overs. Now i need empanadas for the left over picadillo. Lol I will need to heat up oil seperately. I hate to use oil plus the mess I have no room or space clean enough to do all that or the jars of sauce I keep oil in or last time i tried frying Goya frozen churros no good btw. Lol Oh well. I will try it best way I can with what I have.
