Blood Moon Bisque RECIPE:
Ingredients:
• 4 cloves of garlic
• 2 tablespoons butter
• 1 tablespoon olive oil
• 1 large carrot (sliced)
• 1 rib celery (sliced)
• 1 small or medium onion (diced small)
• 2 tablespoons all-purpose flour
• 2 cups vegetable broth
• 1 can (about 15 oz) beets
• 1 can (about 14 oz) diced tomatoes
• 3 ounces tomato paste
• ½ teaspoon smoked paprika
• ½ teaspoon salt
• About ½ - ¾ cup heavy cream
• Fresh basil (optional)
Directions:
1) Hit “play” on your favorite Harp Twins album or playlist!
2) Melt butter and olive oil in pan. Add garlic and sauté on medium heat until garlic is golden brown.
3) Add onion, celery, and carrots and sauté until onions are translucent and veggies are slightly browned (stir occasionally). Stir in flour until blended.
4) Drain beet juice out of can and set aside.
5) Put drained beets, diced tomatoes, tomato paste, sautéed veggies, paprika, and salt into blender - purée mixture.
6) Pour puréed mixture back into the same pot.
7) Add vegetable broth and ½ cup beet juice and simmer on medium heat for about 5 minutes, stirring occasionally.
8) Ladle soup into bowls and drizzle in beet juice plus heavy cream to taste (blood and clouds!).
9) Add cracked pepper and garnish with fresh basil - ENJOY!
