I've been fortunate enough to have family members who are 'top chefs' (Michelin star etc) and we all agree, one of the top 3 places for steak we've ever eaten, was at a certain local pub. A friend worked at the butcher that supplied the chef and they told us that he always bought the cheapest (or one of) meats, but he used to cook it so fantastic, it felt like a steak worth 5-10X as much.

A baked potato out of aluminum foil I've heard of but a grilled steak out of aluminum foil that's a new one I've got to try that. The number 1 rule when i cook a steak is i always make sure to marinade it overnight my go to marinade sauce is teriyaki i find it adds more flavor along with makes it more tender. Cheaper cuts of meat just take a bit more love and technique to make them taste better. Marinades that have some type acid really help tenderize the meat and give it so much more flavor. Great video Volk! Probably one of the best Chefs in the ufc haha.

I used to work in an abattoir and we would get rumps and sirloin with very heavy marbling, just like Wagu, it would get thrown into the mince bin. It's a shame that they don't sell it on the shelf.

Yum! I think primary difference in these two steaks is the spinalis (fat cap) … lower grade steaks have them if they’re cut correctly! This one didn’t. Wonder what the comparison would have been if it had one.

See if garlic basting with traditional butter, ghee, margarine, beef tallow, or chili oil is best. Cook steak, turn burner to low, throw in garlic, drop in butter/ghee/tallow/chili oil, tilt pan, baste the steak thoroughly, remove from pan, rest, cut, eat. I'm guessing butter/ghee will be best, but if one of the other options works well, then it'll be cool to know a non-dairy alternative.

Usually the grass fed is tougher. Some even call it "more gamey." I eat mostly grass fed ground beef regularly and whenever I eat conventional beef I'm surprised how much more I like the flavor. I guess a healthy cow doesnt necessarily produce the best tasting meat 😅🤷♂

I was taught it’s all about how you cut a steak. You can take a tough cheep steak and cut it like a flank steak against the grain at an angle and you can make it enjoyable but there for sure is a difference in high grade and low grade steak cus of the marbling.

Volk, I love the UFC and I love cooking. Anytime you put out a cooking video i'll watch the whole thing. As a Canadian, I think it might be interesting to see you make some Aussie foods/desserts that you enjoy. Another suggestion would be to have you try to recreate something like a Big Mac at home.

Apparently oleic acid content is a good indicator of fat flavour, so it's not just intramuscular fat but the composition of the fat itself that makes the meat. Kuroge washu (wagyu) cows naturally have a higher oleic acid content, and it's also the primary fatty acid in olive oil (hence olive wagyu from Shodoshima). That said, you can ruin a good steak just as easily as you can elevate a cheap one. Just got to play to your strengths.

Both steaks are rib fillet but they are both from different parts of the fillet, you can tell by the fat pattern! Minor detail though! Volk is a living legend, ❤🇦🇺
