It’s actually my first time seeing a Belgian waffle made from scratch

There are 2 different Belgian waffles, both very good! Liege waffles have yeast and big sugar pearls. The non-yeast is almost a cookie like recipe.

I did not know that. I thought when they said Belgian waffles, it’s just crunchy on on the outside, fluffy inside. So does the sugar pearl melts inside after cooking?

3 cups AP flour ¼ cup sugar ¾ cosher salt 7g instant dry years ½ cup warm milk max. 110 3 eggs 2 TSP vanilla extract 10 minutes ¾ cup soft butter 5 minutes rise 1 -2 hours ¾ cup perl sugar 8 pieces bake toppings

If you ask for toppings, you're a tourist. Belgians eat them plain. Also, they're called Liège Waffles, not Belgian Liège Waffles.

Awesome! I struggle making "good" waffles. Always dry, heavy, and not super crispy. What are you using to lubricate the waffle iron (butter, oil, etc)??

Had these in Belgium and could only take a few bites. Super sweet for me. I didn’t realize there was rock sugar inside them. I probably could’ve eaten it without any toppings and it would’ve been better.

It's not rock sugar but pearl sugar. Pearl sugar is made from sugar beets.
