I put the shredded cheese in the bowl first, then it melts under the hot scrambled eggs. I also microwave a potato and dice it up and mix it in with the eggs. Excellent breakfast scramble.

I would use extra sharp cheddar myself I’m actually going to make this one morning and I will use extra sharp cheddar and I like stuff for the kick I might even sprinkle a little bit of pepper seeds in there I’m like Steve I like some black pepper I never use salt when I make food especially stuff that already had contain salt !!

Nothing like cooking with cast iron I got a an old Dutch oven pan like that , great for deep frying or baking. Bread or a cooking chicken. About any thing I. Like cooking out side over a fire,,,
