Almost Homemade Tomato Soup!
In a dutch oven put a small onion chopped and 1 tbsp. garlic
paste. Saute until soft. Remove to a bowl.
Then in your dutch oven pour ...
1 can of Campbell's Condensed Tomato Soup (23.2 oz.)
1/4 tsp. salt 1/2 tsp. black pepper, 1/4 stick of butter and
1 cup of half and half and 1 cup of chicken broth. 1 tbsp. garlic,
also blend in 8 oz. of Philadelphia Cream Cheese... Simmer on low heat.
In a blender put 1 can of stewed tomatoes (14.5 oz.) and 1 can of diced tomatoes (roasted garlic & onion) (14.5 oz.) also add your soft cooked onions and garlic from the bowl.
Run that through a strainer and add to soup.
Then 4 or 5 Roma tomatoes and cut then from end to end and
rub with olive oil and put an a baking pan, add salt and pepper
and a drizzle of balsamic vinegar and bake in the oven at 450
degrees for 20 to 30 minutes.
Liquefy them in a blender and run them through the strainer as well and add to soup! In a bowl put shredded mozzarella cheese then
the soup and garnish will basil, croutons, and extra cheese if
you want then drizzle heavy whipping cream on top.
