For the Pastry Shell:
2 cups (250 g) all-purpose flour, sifted
1 tsp sea salt
2 sticks (16 Tbsp) (227 g) cold butter, unsalted, cut into 1/4 inch pieces
1/4 cup (60 ml) ice water
Lightly oiled spring form pan
For the Batter:
2 cups (473 ml) milk
2 cups (473 ml) heavy cream
6 large eggs
1 Tbsp sea salt
1/4 tsp white pepper, freshly ground
6 gratings fresh nutmeg
For the Filling:
1 lb slab bacon cut into 3/8 inch lardons
2 cups slow-cooked onions
3/4 tsp sea salt
1/4 tsp black pepper, freshly ground
2 tsp fresh thyme, minced
1 1/2 cup Comte cheese (Gruyere is a suitable substitute)

If you do happen to have a marble or stone counter you could just put a pan of ice on it for a few minutes before you start rolling out your dough.

I’ve made Thomas kellers quiche at least 50 times since that boom came out. You’re right it is by far the best quiche recipe ever! Truly worth the effort. I’ve given it as a gift it’s so nice!

@@bjornegan6421 I make several at a time if I’m giving them away, if you’re going to do a good project like this it’s best to make several. They freeze really well. Plus I don’t take 3 days to make them it takes 2.

Kidney beans are the best beans for blind baking because they’re f’ing awful lol. Save the black beans and pintos for chili, white beans for chicken or pork stew, and garbanzo beans for hummus or oven roasting for snacks!

I always liked making my Pate Brisee in the food processor. Learned that “hack” from Martha Stewart and it made pie crust making so quick and easy without my hot hands melting the butter.

I always grew up eating hot quiche and it was one of my favorite dishes. I never knew people ate it cold either until well into adulthood and I actually prefer it cold.

This might be a good winter company idea, having the oven on a lot to warm the house for make ahead fancy brunch dish. The one thing I don’t have in my kitchen, beans… not really 😂 it’s a springform pan.. lol I even have pie weights.

This looks amazing. I *WILL* be making this. Love quiche. Real men eat quiche because it's everything a man loves - meat, cheese, bread (crust), eggs, onions.... it's everything to love. I love a classic quiche Lorraine, but I enjoy adding mushrooms to it as well as a mix of Gruyere and cheddar. But I will be making this exactly as presented. When I saw the custard all whipped and airy, I was on board with this and there was no going back. Hopefully I remember to comment back about it.

In Boynton Beach, FL there's a neat little bistro on the side of a Walgreens off of... Federal or woolbright if i recall correctly? It shares the same parking lot as Walgreens, but it's tucked off to the left and is almost impossible to see if you don't walk around the side of the Walgreens building. Anyway, a mom and daughter worked the counter (small business, don't remember the name of it), and I think theother had a German accent. They had amazing foods and samdwiches there, and the quiche Lorraine was amazing. That was the only quiche I've ever had, and I still remember it lol idk if they're still in business, but it's worth going to if they're still there. There's a Wells Fargo bank right on federal, and the Walgreens/wg parking lot is directly behind the WF.

You could cheat and use puff pastry.

you can make the filling even with just a fork, it works perfecly. For the pastry part, you can use your hands (or whichever tool you wish) but be quick and don't hesitate to put it in the fridge (you must avoid warming it too much at all cost, the butter need to NOT melt. Or you can use a pre-made pastry, noone will judge you for that ;) )

It's only a rich shortcrust pastry - you rub the butter into the flour by hand (start with smaller cubes), or cut it in with a pastry cutter or a knife, you want a sort of breadcrumb type texture by the end, but never let it get greasy, at any feeling of that stop and refrigerate for 15 mins or so, then add the iced water and bring it together. To be honest you'll get a much better and crumblier shortcrust pastry made this way rather than that demonstrated. The less you work the dough the better, you don't want gluten to develop.

@marjieAnn If you go over to Alison Roman's quiche recipe here on YT you will see her make her version of quiche all by hand, including the crust. :) She is a great 'teacher' of making many yummy food 'by hand' and she is fun to watch too. :)

Is the problem pork? If so, turkey bacon. If nitrates, uncured. You could use ground beef. I'd probably use minced beef for the chew or maybe a nice beef sausage. I could see lamb as well. No law against experimentation

@sociopathmercenary Thanks! Very helpful. Yes, this is all generating from a pork free approach. Turkey bacon is a good option, but there is beef bacon and as you mentioned minced beef, at a 80/20 min, which could work fantastically.
