PUDDING CARAMEL CUSTARD
Ingredients
1. Milk 2 cups +1/2 cup
2. Sugar ½ cup + ½ cup
3. Egg 2
4. Cornflour/arrowroot powder/maida 2 tsp
5. Nutmeg grated /vanilla essence ½ tsp
Preparation
1. Taking ½ cup sugar in a pan add 2 tsp water. Heat on slow fire till it turns golden brown, swirling. .
2. Pour this into a dish , swirl well to coat , set aside.
3. Beat ½ cup sugar and eggs together well in a bowl.
4. Mix the cornflour with a little milk ,add to the beaten egg.
5. Add the rest of the milk to this mixture, mix together beating well.
6. Add the nutmeg powder or vanilla essence to the mix, mix well, pour into the caramel coated dish , steam 15 minutes or till done.
. 7. Put in the fridge when cool and serve after 5-8 hours.

ഞാൻ ടീച്ചറുടെ വീഡിയോ വളരെ അടുത്ത ദിവസം മാത്രമാണ് കാണാനിടയായത്. പക്ഷേ ഒറ്റ ഇരുപ്പിന് കുറേയധികം കണ്ടു. അത്രക്കിഷ്ടപ്പെട്ടു ടീച്ചറുടെ അവതരണ ശൈലി. ഓരോ വീഡിയോയിലും അതിനോടനുബന്ധിച്ച കഥകളും, ഗൃഹാതുരത്വവും കൂട്ടിച്ചേർത്ത ടീച്ചറുടെ സംസാര ശൈലി ഒരുപാട് ഇഷ്ടമായി. എന്റെ നാട് പന്തളം(പത്തനംതിട്ട ജില്ല) ആണ് . ടീച്ചറെ പ്പോലെ ത്തന്നെ ഒരു അപ്പച്ചി അമ്മച്ചി എനിക്കും ഉണ്ടായിരുന്നു. എന്റെ അമ്മയുടെ അപ്പച്ചിയാണ്. എന്റെ അമ്മയും കെമിസ്ട്രി ടീച്ചറായി റിട്ടയർ ചെയ്തതാണ് ട്ടോ☺️.(അടൂർ ബോയ്സ് ഹൈസ്കൂളിൽ നിന്നും) ഞാൻ പറഞ്ഞ് വന്നത് അമ്മയുടെ അപ്പച്ചിയായ ഭവാനി ടീച്ചറെ കുറിച്ചാണ്. ഒരു പാട് കാര്യങ്ങളിൽ എനിക്ക് സുമ ടീച്ചറിനെ അപ്പച്ചിയുമായി കണക്റ്റ് ചെയ്യാൻ കഴിഞ്ഞു. അപ്പച്ചി തിരുവനന്തപുരം കോട്ടൺ ഹിൽ സ്കൂളിൽ നിന്നാണ് റിട്ടയർ ചെയ്തത്. അസ്സൽ ഒരു പാചക വിദഗ്ധ ആയിരുന്നു. ഞാൻ ഇന്ന് നന്നായി പാചകം ചെയ്യുന്നുവെങ്കിൽ അതിന്റെ ഒക്കെ ഒരു ക്രെഡിറ്റ് അപ്പച്ചിയുടെ കൂടെയാണ്.so inspiring personality she was. ഇന്ന് അപ്പച്ചിയില്ല.😔. എന്നിരുന്നാലും എന്തെങ്കിലും വിഭവങ്ങൾ കഴിക്കുമ്പോഴും പാചകം ചെയ്യുമ്പോഴും ഒക്കെ അപ്പച്ചിയുടെ കഥകളും അനുഭവങ്ങളും സംസാരവും ഒക്കെ ഓർമ്മകളിലേക്ക് ഓടി വരും.🙏🙏

ഞാനൊരു ക്രിസ്ത്യാനിയായിട്ടു പോലും നോഹയുടെ പെട്ടകം ഇത്ര മനോഹരമായി ആരും അവതരിപ്പിച്ചു കണ്ടിട്ടില്ല. ടീച്ചറമ്മയുടെ video കണ്ടാൽ...' അങ്കവും കാണാം... താളിയും ഒടിക്കാം ' എന്ന് പറയുംപോലെ കെമിസ്ട്രിയും... ജോഗ്രഫിയും ഹിസ്റ്ററിയും ഒക്കെ കൂടെ പഠിക്കാം. ഞാനും custard caramel ഉണ്ടാക്കാറുണ്ട്. എല്ലാർക്കും.. മക്കളുൾപ്പെടെ ഇഷ്ടവുമാണ്. തീർച്ചയായും അമ്മയിൽ നിന്നും എന്തെങ്കിലും കൂടുതൽ പഠിക്കാൻ പറ്റും എന്നതുകൊണ്ടാണ് video കണ്ടത്. എനിക്കും ആ ജ്യൂസ്‌ വളരെ ഇഷ്ടമാണ്. പക്ഷേ അവസാനം ആ വെള്ളം ചേർക്കുന്ന കാര്യം അറിയില്ലായിരുന്നു. Pressure cook ചെയ്യുന്ന കാര്യവും..Thanks. ഞാൻ 1:1 / 1:2 കണക്കിൽ condensed milkum കട്ടിയുള്ള പാലും ( 3% or more, ഇവിടെ സാധാരണ അത് red കളർ ബാഗ് ആയിരിക്കും., നാട്ടിലെ അറിയില്ല ). അപ്പോൾ പഞ്ചസാര ചേർക്കേണ്ട ആവശ്യമില്ല... അതിലെ തന്നെ മധുരം correct ആകും. വട്ടപ്പാത്രത്തിലൊഴിച്, സൈഡിലെല്ലാം ചുറ്റിച്ചു വയ്ക്കും അപ്പോൾ ഏതാണ്ട് തൊപ്പി വച്ച പോലിരിക്കും. ചിലപ്പോൾ ആനീസ് കിച്ചണിലെ പൂവപ്പം പോലെ അരികിൽ ലെയ്സ് പോലെ ഡിസൈൻ കൊടുക്കും. അതിനും teacher ചെയ്ത പോലെ വെള്ളം അവസാനം ഒഴിക്കുന്നതായിരിക്കും എളുപ്പം. ഈ trick അറിയാത്തതു കൊണ്ട് ഞാൻ ഒത്തിരി ബുദ്ധിമുട്ടിയിട്ടുണ്ട്. Vanilla യും തുള്ളിക്കണക്കിന് ഒഴിക്കും. അത് ചിലപ്പോൾ concentration difference കൊണ്ട് കൂടിയോ.. കുറഞ്ഞോ പോകാം... അതുകൊണ്ട്...ഞാൻ സാധാരണ പാത്രത്തിൽ വച്ച് ആവി കേറ്റും. പക്ഷേ സമയം 1/2മണിക്കൂർ എങ്കിലും ആകും. ചെയ്യുന്നതായിട്ട് കൂടി ടീച്ചറമ്മയിൽ നിന്നും കൂടുതൽ tips & tricks പഠിച്ചു. ഈശ്വരൻ ആയുരാരോഗ്യസൗഖ്യത്തോടെ ടീച്ചറമ്മയെയും പ്രിയപ്പെട്ട... കാണാതിരുന്നിട്ടും.. മനോരാജ്യത്തിലെ ശാസ്ത്രകൗതുകം മാത്രം വായിച്ചു ആരാധ്യനായ ശിവദാസൻ സാറിനെയും ധാരാളമായി അനുഗ്രഹിക്കട്ടെ. 🙏🙏😄😍
