Back in the Bronze Age, at least 95 percent of the population worked in agriculture. So, any particular person would have a 95 percent chance of working as a farmer -- and a significant fraction of those would be farm-slaves, worked to death to help produce the tiny surpluses achievable in subsistence farming. I can definitely tell you've not set gravity to work on regular soil, with sideways instability. If you had, finding those huge, cavernous "cenotes" would've been a very different experience. 😀
