Just plant them 3x3, with nothing else in between. Sometimes they grow into one giant fruit. I had to leave them be without harvesting for a couple more days then more giant ones showed up.

Hi! Hedges can be unlocked when you reach level 6 foraging. Sadly, they patched this on the December update. Mastery level goes only up to level 5 now.
