Back in a time when Indian meal meant cornmeal and pudding meant...cake? Let's see how foods have changed over 200 years. Today we have a boiled pudding, a common dish among the working classes of early America. A pudding such as this could have been all that you'd have eaten for the day. Boiled puddings were popular among all classes, rich and poor, though those made for the wealthy were just another dessert served after 7 other courses, consisting of exotic fruits and brandy.
All spices used were kindly donated by our local tea and spice shop, Quintessential Riverfront Teas & Spices. If you ever visit Ste. Genevieve Missouri please see our friend's store, which has been open since 1806.

I asked the apple if you would have a good day. It said yes. Below you will find the recipe for this pudding translated into modern directions from the original, which you can always find at the end of my videos. Thank you for being here today ❤ Boiled Indian Meal Pudding, 1828 2 cups of yellow cornmeal 1 cup of warm milk, more or less 1 medium sized apple, peeled and diced 1 teaspoon of salt 1/4 cup Molasses 1 teaspoon of ginger A thick cloth String Flour, a few tablespoons Water, for boiling Combine your cornmeal and milk and stir up well until you've formed a thick paste. Into this add salt, ginger, molasses and a finely chopped apple. Take the cloth that you intend to boil your pudding in and dunk it in steaming hot water till saturated. Remove from the water, open it up and where you intend to lay down the pudding flour it well and thickly so that none of the cloth is visible beneath. Lay your pudding in it and tie the cloth up loosely. Let simmer gently, uncovered for 4 hours. * I actually boiled mine for 3.5 hours and thought that it tasted great with the center being done. If you are impatient like me keep that in mind.

My wee aunty Sadie used to make clooty dumpling... which is cooked in a similar way. Full of spices and dried fruit... And there would be sixpenny pieces hidden in it at Christmas. You ate it with custard as a desert. Or it could be sliced when cold, then fried in grease with bacon, sausage, tattie scones and eggs for a Sunday breakfast. Or even just eaten cold.... I miss her for lots of reasons, but her clootie dumpling was the best in Glasgow. 🏴󠁧󠁢󠁳󠁣󠁴󠁿

Women's clothes of that era were quite light. The stays (corset) were just long enough to support the bust, and the chemise was of light cotton. Justine's dress is made of light cotton, and the sleeves are short enough to leave her lower arms bare and cool. And there's a cross-breeze from the windows.

I have eaten cornbread since I first grew teeth, corn muffins, corn pone, cornmeal mush, fried corn fritters, hush puppies,I found out I really like spoon bread about 15 years ago which goes great with fried apples and pork chops. It is also another Native American recipe said to be from the Sewee tribe called Awendaw,or Owendaw after the village, You boil milk and add cornmeal you can use plain but self rising works same it needs some leaven, eggs, a bit of sugar, butter. You can find the rest of the story if you Google KY spoon bread,we even have a spoon bread festival in Berea KY. Some folks add jalepeno peppers,or a bit of red pepper,it rises up like souffle I make mine in a 6 inch cast iron skillet,I half the big recipe it's delish, now I want some

The way Justine looked at that apple as she pulled it out. This is another one of those recipes on my to do list….

Mishmish goes outside when it's raining? I thought all cats hated rain. Relaxing video as always. Thank you for making it.

He shouldn't be allowed outside off a leash. I know this way of life is supposed to emulate the past, but a cat's safety and life is more important than maintaining the illusion.

In Scotland 🏴󠁧󠁢󠁳󠁣󠁴󠁿 we make a Clootie Dumpling in much of the same way. We have fruit and spices in it and after boiling as you did, we put it in a low heated oven, turning it top to bottom until the skin is dry (the flour and water) - yummy!!!

I seem to recall a "Christmas/Plum pudding" along with other traditional English and Scottish puddings were cooked very similar. I know they are boiled and steamed. As you said the Early Settlers always made due what they had. It was also the mantra of growing up in NH and MA.

Ich finde es toll so zu leben. Es ist eine Ruhe. Keine hecktik. Einfaches tolles Essen. Kochen was man findet. Für den Winter was einlegen oder einkochen. Man braucht sich keine Sorgen um Strom machen. Keine Sorgen um Miete. Einfach ein Holzhaus. Paar Hühner. Schlachten selber. Eier bringen die Hühner. Gemüse kann man anpflanzen. Ich liebe es. Einfach toll
