Islanders from the Pacific introduced me to a dish which is simply a good amount of fried onions, then stir in and cook an adequate amount of tinned corned beef making sure to get a bit of browning on it. Then add an appropriate amount of cooked rice as the carbohydrate instead of the potatoes used in hash and stir it through. It’s so simple and delicious plus all of the ingredients store incredibly well without refrigeration so no wonder it’s popular in these remote places. I love to cook it when I’m camping and your dish shows me some ways I could pimp it up with some other long life ingredients. It won’t win any Michelin stars particularly for presentation but a tasty, satisfying hot meal like this is just the ticket after a long day in the great outdoors. 😋😋👍👍

American, here... Okay, I have to confess to a guilty, lazy pleasure of eating canned corned beef hash, fried until somewhat crispy, then topped with fried eggs. It's always been satisfying enough -- and ridiculously simple -- so I never bothered making the hash from scratch. I just might have to get some corned beef and Colman's English mustard and give this a try. I've never given much thought to what seasonings (other than the obvious salt) went into the hash The mustard and Worcestershire sauce have my imagination going, now. (P.S. Rik, I hope that you have trashed that scratched Teflon pan. That's not good for you. Most, if not all, of those non-stick coatings are health hazards -- and using metal utensils on them makes things worse by loosening them up more quickly. Be safe.). As always, thanks for sharing.

@@sandradavies7804 Yes, we can. (We call them "cans" here in the States.) Hormel is a popular brand here; there are others. Like any canned product, I am sure it can be improved upon for personal taste; made-from-scratch is almost always best. But, when time doesn't allow, a little imagination can help make a prepared, canned product pretty good enough.

I'm steadily working my way through your vids Rik! This is one of my favourite dishes of all time. Love tinned corned beef and hash with a couple of eggs on it is luxury. Corned beef is a cupboard stand by to look forward to, not settle for. Takes spice so well. Like you trying not to eat it out of the tin is the problem, I compromise - I take a half inch slice off the top and bottom that has the extra fat and settle for that. Lived and worked in the american south and a mexican friend used to make me my favourite food - Tomales - for me most weeks When we were set to come back to the uk she took me on one side and showed me how to fake an authentic filling for them with tinned corned beef! It's not a patch on her real ones but man are they a tasty centre for my "Cheating Englishman's Green Chillie Tomales!" Now my question, over there I also discovered the Reuben sandwich, Corned beef, plain brined sauerkraut and "russian dressing" on thick dark rye bread I'm wondering if in your long and varied career if you've ever corned your own beef? If you have then that would be my personal suggestion for a vid - unless you've made tomales!! 😆 Thick sliced corned beef, is so good, and a totally different animal to tinned, that's like pork and spam heh

I've had a go at that home made corned beef thing mate. I'm about 6 miles from the centre of Manchester, and there's a couple of restaurants that make corned beef hash (Topped with crispy streaky bacon and a poached egg), and much to my shame, I've never got round to trying it. However, I did get hold of their recipe for corned beef (Or corned dog as it is often called in these parts). This is the one I have made a couple of times, and, for me at least, is amazing. I wouldn't say it's any better than the tinned stuff (I love that), but it certainly isn't worse either. Just a little different. Thanks for the reminder, I need to get some nice brisket and do it again. The corned beef element is the long bit of the recipe for the hash. Well worth the time and effort, and not difficult at all.

In many of the US Family Restaurants, Corned Beef Hash is served in a small, cast iron griddle or pan (similar size to a plate) with the egg(s) on top, still sizzling (on top of a heat resistant pad to protect the table) when it is served to you at the table. The mix is dryer, as the cooks omit the beef gravy. They just fry the hashbrown potatoes crispy together with onions and green peppers mixed with the corned beef. Favorite weekend breakfast. Yummy!

However, They change the recipe without mentioning it so in my last purchase, I ended up with a stockpile of very low quality awful tasting stuff that I had resigned myself to having to take as a loss and toss out.💸 But I tried your recipe here and it salvaged this unfortunate purchase, transforming it into an absolutely delicious meal. thank you… Thank you…Thank you! 🎉🎉

Yeap one of my favourites, which can also be made with a tin of strewed steak from a tin most have at least 75% beef content, about the same price as corned beef or a little cheaper.

My grandmother used to cook extra roast beef. Next day she's getting it with that old Crank grinder, onions and potatoes. Then she's fry it! Oh my gosh! She was a good old ranchers wife and could she ever cook!
Grew up on this, my mum had carrots, and would add dried onioins also. Its really nice with a splash of tomatao sauce in

Rik, next time you make a hash try adding some crumbled up black pudding to the mix before frying the whole thing. I would use two of the small Bury puddings to the quantity of your ingredients, by preference I would use the puddings with the smaller chunks of fat.

What are grits?
@kathrinekerns83989 ай бұрын
@@c.marmion8430 grits are corn meal, except not ground so fine. I'm sure you've heard of grits before?.
@c.marmion84309 ай бұрын
@@kathrinekerns8398I'm in the UK and we don't use that word here. The only time I think I may have heard it before is on the TV show 'The Beverley Hillbillies' which I used to watch in the 1960's! Granny Clampet used to often mention vittals? and grits, but I never knew what she meant.🤔
@kathrinekerns83989 ай бұрын
@@c.marmion8430 We even eat grits in many dinner or super dishes, like cheese grits, shrimp and grits. It is more of a Southern tradition. And, yes, I remember Granny also eating Possum 😂😂😂She was very funny. Making fun of people from the hills. I would like very much to learn more about food from the UK. It is interesting. P.S. I was raised on a farm in Idaho so I know how to cure the Corned Beef, and also a little bit about the famous Idaho potatoes. 🌞🌞

I quite often do this (without the onions or seasoning) with mashed potato and then put it to a dish like you and put cheese on the top and grill it. May sound horrible but it is a really easy quick meal to make. Especially when cooking for 5 people 🙂

@BackyardChef 4th generation 53 year old Australian of English/ Irish ancestry here: my parents/ grandparents made corned beef to serve with veggies, salads or on sandwiches of course, but never used corned beef to make hash. It is not seen on cafe menus in Australia either, so using corned beef in this way is new to me. I plan to give it a go, but I am going to use a can of corned mutton that I recently found newly stocked in my local supermarket. I have never had corned mutton either, since mutton is not a commonly eaten product in Australia for my generation. I expect the canned corned mutton will give the hash a slightly different flavour, but basically the same texture. *Crossing fingers that I like it!*

It is important for me to note that many Americans have not evolved as the Brits have finding a work around word for Worcestershire. We all just stumble over it like fools. It is used in nearly every household.
@BackyardChef9 ай бұрын
Yes many stumble trying to say it. Most of the UK just shorten it to Worcester sauce. Best, Rik
@SamThredder8 ай бұрын
Its not even a work around, or a contraction, Worcester is a city in Worcestershire where Lea & Perrins is based. Worcester in Massachusetts is also pronounced exactly as we pronounce it. Wusta. Add a sheer or a shuh sound at the end, never 'shyer'. 3 syllables in all. WU-STA-SHUH

Hard to beat leftovers cold on crusty rolls with pickles.. BUT, my next leftover corned silverside will be made into hash, a la your ideas!😀 It'll be different, I guess, but that's the fun of cooking!!! All the best from Aus mate!😉... AND THANKYOU!🙂

My mom made hash a lot when I was a kid, but it was very simple...just beef and spuds. As an adult, I always have embellished it, using an onion and some pepper. But yours sounds great...with adding garlic. I have a preference for red potatoes...a bit less starchy, and well.....I just like the red color of the skin.

I used to make this with canned corned beef but now, cook a fresh corned beef brisket in the instant pot and (1/2hr adding Guinness as the liquid - later use some of the liquid to cook the hash) make my hash from that. It’s nice to add some diced red peppers for Color. Use frozen hash browns to really make this easy. Delicious!

Used to make this when we went camping - boil potatoes & onions in saucepan. chop up corned beef. drain water off potatoes and add beef to pan. Break up with a fork or masher and mix up. Tip into a frypan and flatten out to fill the pan with a little butter or oil and fry til crispy on the bottom. Had the whole campsite enquiring about the delicious smell. Save water from potatoes to make gravy if you like. Mimimal washing up too!
