This was a meal that I had been craving for a while. The day was perfect. The weather was awesome. The only regret is that we couldn't cook it by the riverside. We usually prepare economical meals and our kids are learning to eat what we cook. They were never really fussy eaters and I am forever grateful for that. We wanted something nice today and tried to stretch the dollar as much as we could. Needless to say, I have to start back my kitchen garden. It is a necessity more now than a hobby. Enjoy.
