Counter Attack Setup: the foundation for being sneaky

Hi, i'm a foil beginner at 25 y.o, started out a couple months ago and i've been looking for video ressources to get a better understanding of foil fencing and be aware of the options that are available during a match, and your videos are a godsend! Been checking out the whole playlist and it's so interesting! I got a feeling it's gonna help me a lot in my progression. I've got a question. Is it legal to do a stop hit counter attack, but instead of retreating backwards after the hit, you go off the side of the piste?

If the touch occurs prior to leaving the piste, the touch is legal. However, if you leave the piste so as to avoid being hit, this can be penalized. You can displace your target by twisting or stepping to the side which may result in eventually leaving the piste but not interpreted as purposefully leaving the piste to avoid being hit.

that little spin you did after the counter attack the first time, is that legal?

If your back is turned to your opponent, it would not be legal. However, should the spin take place after making a successful touch, the referee would be calling halt as a result of the touch, not the turn.
