I don't think it's possible to catch large catfish in Japan, but rather than cutting them into blocks with the bones still attached, they are often cut into three parts, one for each side of the body and one for the backbone, and only the flesh is cooked. Fresh catfish are eaten raw as "sashimi". They can also be boiled, grilled, or deep-fried, but the seasoning is usually simple.
