i have been catching, cooking, smoking and eating wild Coho, Chinook, Pink, Chum and Sockeye salmon for over 50 years. that piece of salmon you cooked was farm raised Chinook salmon. you can tell by the color of the meat. (should be pink/red, not orange. that's a dead give-away). if you ever get a chance to eat wild Chinook salmon, do it. it's got 10X the flavor of farmed salmon. and you want the most silver color you can get in the skin, on the sides. this means that it was caught in very cold water, and is a good thing for flavor. the darker the side skin, the longer the fish was in warmer water. (develops a muddy flavor).

A special THANK YOU and all my prayers to Brian Cooper Mount and his family. It is because of you and your fellow servicemen and women (and your families, too!!) that we still live in a free country with so many good things and people to appreciate. Yes, we do screw it up from time to time, but you all have fought, and too many have died, for our right to do that too. With your help and with God's blessings, our country will continue strong, free and brave! Thank you, Kent and Shannon, for your continual prayers and respect for our servicemen women and for our country! Bless you all. Good gracious but I think that Salmon even makes my teeth salivate!

During the time my photography studio has been closed here in Maine since March, I have had lots of extra time as my wife still works and my 15 yr old daughter is off from high school. I love to cook, but your recipes and teaching have made me a "super star" at home. I used to talk lighting and cameras with my wife. Now I explain how I am going to brine something, or season a skillet or properly use my grill. She smiles and says "I don't know what you did with my husband but I love it..." So far it's been steak, and all the extras (potatoes, Mexican style cooking, veggies, sushi style etc.), but THIS is my first fish recipe -perfect! I already am using your original seasoning. My wife got on your website. Christmas is coming early, from apron to spatulas and more - for me! yay! God Bless, Kent, and for your American pride. In times like these, your videos are literally an oasis for our minds. Now, going to get some Salmon - it's what's for supper, and my wife and daughter are going to love! A million thanks. - PS despite my reticence, my wife insists I do the cowboy dance. lol

thank you Kent for your recipes, videos, and beloved words of advice. you are one of the coolest virtual grampas ever. here's a paragraph from a novel I once read about a young soldier, "Some believe the world owes them something and they owe the world nothing. It was the world around him that let him live, and the efforts of millions of dead soldiers who had kept things together up to this point." we all owe them a debt of gratititude, at the very least. they deserve our commitment to keep the American Dream alive.

I am going to cook this tonight. I will update with results. Posting after Dinner. I have to say that searing in cast iron adds a whole new dimension to my cooking on the grill. Totally different taste to salmon other than some kind of smoking or grilling. Wife and I loved the taste of Kent's recipe and searing suggestions. I give it a 10! Using the grill to heat the skillet outside does take care of the cooking fish smells in the house.

What you did there at the end for the young man that passed defending our country, this is a BIG part of the reason I don't watch TV anymore. I watch stuff here on KZbin, I hang with friends on Twitch. I try and stick with real people that care. It was those people that cared that helped me last week during a dangerous time in my life. I had lost 2 good friends, one to COVID and another to Pneumonia, and I very nearly took my own life when I sought help...in part because some folks shut me out. Others helped me, folks like you, folks that care. It is because of that that I am still here today. Amen to you good sir.

Kent, I sent this video to my Salmon loving Sister in Houston Texas. She texted me and said you did it right and very good. She does not use cast iron anymore, but does use an Instant Pot. I have never fixed Salmon so she said she would make me a Salmon dinner.
