The pizza stone is ok to stay in the metal in the oven the handles are what makes it easy to take out of the oven. Also it’s supposed to preheat inside the oven. Pizza goes on the hot stone ♥️

As someone who's made croissants professionally, I feel compelled to give you some pointers. If you look on my channel, there are videos of making pain au chocolat and plain croissants. 1. What you ended up with was probably a biscuit due to the fact that the lamination didn't work. When you started with the butter, it was way too cold. At no point should the butter snap like a sheet. There's a balance between cold, pliable butter and cold, stiff butter you have to achieve. So that when you tri-fold and roll, the butter doesn't shatter but instead forms hundreds of layers with the dough. That's what makes the flaky layers. With that high quantity of butter, the lamination is critical otherwise you get what happened, pools of butter. 2. When you roll the out the dough for the final time to do the final shaping, it should be rolled out nice and thin so as to stretch the layers. You also need to take care how you fold it and make sure the ends are neat and straight otherwise it will rise unevenly, which yours did. 3. Stop opening the oven door! Every time you crack the door you lose 15 degrees at least! The door has to remain closed the entire time. It also causes air to rush out and things will deflate. 4. Unrelated to the croissants, the pizza stone is meant to be heated in the oven while the oven is pre-heating so it's screaming hot when you put the dough on it. And yes, the metal lifter doesn't go in the oven. Hope that helps!

I make croissants often, but it takes 2 days every time. Chocolate filled croissants are called Pain Au Chocolat. I was glad to see you didn’t settle and make a faster version. Even though croissants take a long time they are well worth it!

The pain au chocolats might have looked a tiny bit clumpy because you didn’t use dairy milk. The fat and proteins in dairy milk bind much better than coconut but it seemed to work out just fine because they baked perfectly!
