I've worked for a brewery for the past 3 years (almost four years) and was a brewery tour guide before moving to packaging, so let's break it down a bit! So Wort is basically sugar water that is made from steeping grains (such as barley, or wheat) in hot water. Basically making tea. In this instance, you used the malt extract and put that into the boiling water. Next, you added your hops. The point of adding hops into the boil isn't necessarily for flavor. In this step, it acts as a bittering agent to help balance out the sweetness from the wort (aka sugar water), and it also acts as a preservative, so your beer lasts longer! Once you poured everything into the first bucket (for fermentation) if you would have put hops into the fermentation bucket, those hops would have been used for flavor and aromatics, which is why your beer ended up not being very hoppy. The type of yeast you use is crucial to the style of beer as well. You have lagering yeast which is good for lagers, porters, stouts, and even pilsners. Whereas ale yeast is good for lighter beers like...ales, and ipas, and others (not tryna get to crazy here.) A good malt style of beer would be like a Samuel Adam's. Malty notes typically refer to something that is slightly toasted, maybe nutty, caramel, and slightly sweet 👌🏽 in domestic beers you typically don't see much that is 7%, but in the craft world, 7% is pretty normal. Where I work, a lot of our beers are in the 6%-8% range for the beers we package, and some that we don't package are up to about 13.5% 😂 hope this helps understand it a little better! 🙌🏼
