Hello Bonita'' love watching your videos, I have learned a few new words from you ,,one you use the word Galloping on the boiling water we here in virginia use the word Rolling boil , I like your description , and also I have never seen Crab Apples as large as those you picked, my mother had us to pick the old wild type crab apple which was very sour not for jelly but she added crab apple to the other types of jelly like Elderberry and apple because crab apple has a lot of pectin and aided her jellys to jell , I have watched other videos of your and you are a lady with pride and love to keep the old way going which i like that , never forget how our elders did what we are trying to do. because it makes no sense to re -discover , thanks and keep cooking .

There are different types of crab apples and here in Newfoundland we do have the sour green crab apples that we would use them years ago for playing with. But these red almost a Macintosh taste is juicy and lovely to work with and the taste is lovely. Making crab apple jelly is work but well worth it. In my boyhood home we had 2 crabapple trees. Every fall we made jelly. Many, many mason jars of it. Although I ate it, I wanted strawberry jelly or grape jelly like my friends.

Ok your the only one I have committed to listen to. So I made some crab apple jelly for the first time. I didn’t let it get to a rolling boil the second time. So I put it back on and let it get to a rolling boil. So how long does it take to firm up it’s still liquid I did it yesterday morning. What did I do wrong

Hi Tedra, Thank you for your message and for making our recipe and for watching our video. Its a long video and a process to making this tasty jelly. I don't think you did anything wrong, when making crabapple jelly or any jelly recipe its time consuming and takes lots of patience. I will share a couple more of our jelly recipes to check out and maybe they will help you understand the process. But also put the jelly back into your saucepan or boiler and continue cooking it, scooping off any form and then check two ways, one Take the temperature of the jelly with a candy or jelly thermometer. When done, the temperature of the jelly should be 220°F, 8°F above the boiling point of water, or use a cold plate by putting it in the freezer or fridge for a few minutes. Then take a spoonful of liquid and place on the plate, if the liquid stops running and starts to thicken your jelly will set in the mason jars. How deep is the boiling water you put the jars into to seal them in the hot water bath? I presume not over the tops as you used your hands.

Hi Linda: Thank you so much for your message and for visiting my channel, you only need enough water for it to steam and seal, just below the lid about half way on the bottle. I am new to jam making so watching as many videos on KZbin as possible to learn, but in all of them they say to fill the jars to within 1cm from the top of the jar, and the water in the water bath must be 1" over the top of the jar, so who is right and who is wrong, I am now confused, plus will the jam I've made be okay as I have filled my jars, but they have sealed?

Hi Jennifer: Thank you so much for your message and for visiting my channel, sometime to much information is not good. In my experience in making jams, jellies and pickles it is very important that the jars are sealed before storing them in a pantry. But how you get to that end result is done in many ways, of course boiling them in a water bath will be the safer way, but if your mason jars and cleaned and hot and the liquid you pour into the bottle is hot and the top rim is clean of food. Then you can put the cover on the bottle and tighten, let it go to room temperature and then check your rims. Two ways, one if the middle cap is down and not popped up your jam, jelly or pickles are sealed, the other way is to remove the twisted cap and check the lid by putting your finger or thumb at the side and if it don't pop up by lightly rubbing your finger upward. If it do pop up you need to keep the mason jar in the fridge until the jam, jelly or pickles are eaten. Date and label all jars for safe storage to know when it was made. I hope this helps and enjoy your bottling of all foods. ; ) Bonita

I've been watching a lot of jam and jelly canning videos lately, and they all say to leave a headspace of 1/4". I googled this to find out why, and found it's necessary for a good seal, however I see that you're not doing this. Why is that?

Hi Amy and thank you for your message and for stopping by....yes for sure give it a 1/4 inch head space and my jelly with only stored in the fridge on this video.....but if you are making a big batch and going to store for the winter. hey, sounds likea great recipe. Itll be my first time making crab apple jelly, the only thing i want to make sure of is how long they last. I always prefer to make jams with less sugar than is usually recommended for in a recipe, but my mother says you need to put the full amount in to properly preserve. A cup of sugar to a cup of juice sounds like an awful lot though. Any change you can reassure me on how well the third cup of sugar preserves the jelly? thanks and cheers from PEI.

Thank you Terrence for stopping by and we understand totally about using lots of sugar, but sugar makes the jelly and like your mom said to properly preserve the jelly. They will last for a long time I'm, sure if I look I would have one from last year and maybe 2018 as well. Proper sterilization of your bottles and lids, filling them while they are hot and the jelly is hot, sealing them and storing is all important steps. I just made crabapple jelly, but i probably didnt allow for reduction.. i think i will empty jars back in pot, and i will bring to boil again to reduce.. no other recipes mentioned THAT.. so thanks.

Yes thats what to do, sometime you can tell if its not ready by the jelly foaming up around the side, means its not ready. The water content is still there, but don't over cook it because it will be like rubber. Do the taster by putting some jelly on a cold plate to see if it sets. Enjoy and all the best. :) Bonita

I don't why you would call those crabapples , there just wild apples. A crab apple is the size of a large marble & smaller at the most This also is why the colour is yellow to greenish , With real crabapples that juice would be Dark red to light red , You are making apple jelly .
